Description
Name: DOC - Douro
Grape varieties: Touriga Nacional; Touriga Franca and Sousão.
Production characteristics:
- Cima Corgo;
- Schist soil;
- 450m average altitude;
- Average vine age: 25 years.
Vinification: After careful collection of the grapes in small capacity crates, they are completely destemmed; prolonged alcoholic fermentation (part in foot treading mills, part in small capacity vats) with temperature control, followed by spontaneous malo-lactic fermentation.
Internship: 14 months in 225 liter French oak barrels
Filtration: Cartridge + Membrane
Physical and chemical analysis: Alcohol - 13.5%; Total Acidity - 5.6 g/dm3; pH - 3.62
Tasting Notes:
Visual examination: Clear, deep ruby red color
Olfactory examination: Very complex, with notes of red fruit, jam, chocolate and a slight smokiness.
Taste test: Freshness, good volume and intense tannins with plenty of structure. Long, intense finish.
